Lettuce Tacos

Lettuce Tacos
Beautiful way to wrap up some veggies for a colourful mouthful of flavours!
1) Choose Green Wrapping:
a. Leaf of lettuce: green lettuce, boston lettuce, red lettuce, endive, Romaine lettuce works best.
2) Choose Coloured Matchsticks:
a. Red peppers sliced thinly
b. Carrot ribbons or julienned
c. Cucumber ribbons or julienned
3) Choose Flavour of Sauce:
a. Bean Dip
· Can of white kidney beans, drained & rinsed
· 1/3 cup of fresh herbs (e.g. dill, cilantro, parsley)
· ¼ cup extra-virgin olive oil
· 1 lemon – juice and zest
· 1-2 cloves of garlic
· Sea salt & pepper to taste
b. Creamy salad dressing, guacamole or hummus
4) Assemble on leaf - veggies in middle along rib, sauce on top or bottom
5) Roll up like a taco and munch!
We do a lunch program at schools, as an alternative to pizza lunch, where the students actually learn how to make their own tasty lunch, and eat it together. Parents love it, as they get a day off from making lunch and their children learn the skills to make their own lunches at home.

Bean Dip
· Can of white kidney beans, drained & rinsed
· 1/3 cup of fresh herbs (e.g. dill, cilantro, parsley) or 1 teaspoon of dried herbs
· ¼ cup extra-virgin olive oil
· 1 lemon – juice and zest
· 1-2 cloves of garlic
· Sea salt & pepper to taste
1. Open can of white kidney beans.
2. Pour beans into strainer over sink and rinse in cold water. Put into MFP.
3. Cut lemon in half, and use citrus press to get juice and put lemon juice into MFP.
4. Peel skin off one garlic clove. Put garlic into MFP.
5. Measure olive oil and put into MFP.
6. Add ½ tsp salt, pepper, 1 tsp herbs.
7. Put the MFP lid on, and push the arm 10x per person.
